Hot take: I finally figured out how to get crispy air fryer tofu without it sticking.

After 5 failed batches, I coated the cubes in a tablespoon of cornstarch before spraying them with oil. Anyone have a better method for seasoning it?

That soy sauce slurry from @susan_allen, does it ever make the cornstarch clump up?

What about adding a little soy sauce to the cornstarch? I mix a teaspoon into the cornstarch slurry. It makes a paste that gets super crispy. Then I toss the cooked cubes in a dry seasoning mix right after they come out. Garlic powder, onion powder, a bit of smoked paprika. Sticks to the hot tofu perfectly.

Have you tried pressing the tofu first? I wrap the block in a clean dish towel and set a heavy pan on top for about twenty minutes. It gets rid of so much extra water, so the cornstarch paste really sticks and crisps up without steaming.
