My mom told me not to crowd the basket and I didn't listen
She said 'give them room to breathe' when I was making frozen fries. I dumped the whole bag in anyway because I was in a hurry. They came out soggy and pale, not crispy at all. I had to do a second batch properly spaced and it took twice as long. Anyone have a good trick for cooking a full bag without this happening?

Honestly, your mom's advice is overrated. I dump the whole bag in every single time and they turn out fine. You just need to crank the oven way hotter than the package says, like 425 instead of 400, and flip them halfway. The soggy batch probably needed more time, not more space.

You're totally right about the higher temp. My oven runs a bit cool, so I always go at least 25 degrees hotter too. The flipping part is key, nobody ever mentions that. I tried the single layer thing once and it just felt like a waste of time. As long as you shake the pan halfway, they all get crispy.

The single layer rule is for people who don't know how to use a spatula. A good shake gets the job done just fine. We're not running a restaurant here.

Come on, that shake method is how you end up with half the fries still pale and soft. Single layer isn't about being fancy, it's basic heat science. Crowded food steams instead of browning. Try it once with a real sheet pan, you'll see the difference.
