I see so many people just dumping raw wings in the basket and then complaining they're greasy or the skin is rubbery. You have to pat them bone dry with paper towels first, then toss them in a bowl with a tablespoon of baking powder and your spices. The baking powder pulls moisture out and makes the skin crisp up like crazy. I learned this after a batch of soggy wings for a game night last month.
