The $15 analog meat thermometer that made me ditch the digital probes

I've been using a digital instant read for years and figured it was the only way to get a good crust on chicken thighs in the air fryer. Last month my niece left her old analog thermometer at my place and I tried it on a whim. The difference was the timing, not the temp. With the digital one I was checking every two minutes and opening the basket constantly. The analog one made me wait it out. I let a whole batch of wings go 12 minutes without touching them and they came out with that crispy skin I'd been chasing for six months. Now I use the analog for the first cook and only pull the digital out for the final check. Has anyone else found that the tool itself changes how you actually cook, not just what you measure?

Hated the idea of analog thermometers for years, thought they were outdated and slower than the digital ones. But @wadejenkins hit it on the head, the real change is in how you act, not just what the needle says. I still grab my digital for the final temp check, but the analog keeps my hands off the food long enough for the crust to actually form. It’s like the tool trains you to trust the process instead of hovering over it. Has anyone else noticed their kitchen habits shift just based on which thermometer is sitting on the counter?
