Took me 2 years to try chicken wings in my air fryer and now I'm mad at myself for waiting that long

Last month my buddy Matt finally convinced me after he sent a photo of his wings with the skin all crispy and no oil, so I tried it myself and now I can't go back to deep frying, has anyone else found a wing recipe that changed how they cook everything else?

The key for me was patting the wings dry with paper towels and leaving them uncovered in the fridge for a few hours before cooking. Sounds weird but it dries out the skin even more and you get that extra crunch without any baking powder tricks. Also try tossing them in a little cornstarch before the seasoning next time, just a light dusting makes a big difference in my experience. Your mileage may vary but that combo turned my air fryer into my go-to for pretty much everything now.

My buddy Dave tried this exact method last month on a random Tuesday night and he ended up eating like 18 wings by himself because they came out that good. He said the fridge drying trick reminded him of how his grandma would prep chicken before frying it in a cast iron pan. @robinc60 I gotta pass that cornstarch tip along to him since he's been experimenting with different coatings and that sounds like the missing piece.
