My grandfather's 20 year old grill vs my new fancy $800 one

I finally broke down and bought one of those new ceramic grills last spring, spent over 800 bucks on it. You know what? It can't hold heat steady like his old beat-up Weber kettle from the 90s. We tried cooking a 10 pound brisket for a family get-together in Austin and it was all over the place temperature wise. Has anyone else gone back to a simpler setup after trying the expensive stuff?

Just went through the exact same thing with my Kamado Joe. Spent a Saturday fighting with it to stay at 225 while my neighbor's dented kettle ran steady as a rock. That beat up Weber he got for 30 bucks at a garage sale cooks everything better than my fancy egg ever has. Makes you wonder why we keep buying into all the hype.

Oh man, that rings a bell. I had a coworker named Dave who bought a beat up Weber Genesis off some guy's lawn for $40. He scrubbed the grates with a wire brush, replaced the flavorizer bars with some cheap ones from Amazon, and that thing cooked the best ribeyes I've ever had. Meanwhile, my other friend spent $800 on a pellet smoker and still can't get a decent sear. @ray562, your buddy's Craigslist find is the perfect reminder that a simple, direct flame often beats all the fancy technology.
