Finally gave up on rushing my sourdough starter
Spent three months trying to force a starter that would double in 4 hours. Then I just let it sit on the counter for two weeks feeding it once a day. Started using it on day 14 and the loaf came out perfect. Has anyone else had a starter that just needed more time?

You say "just needed more time," but three months seems excessive for a starter to be ready. I've been baking for years and usually see activity within a week. Maybe the issue wasn't time but water temperature or the flour you were using.

Oh wow. Three months is dedication. I had a starter that took almost six weeks to finally get going and I was ready to toss it. Some starters are just stubborn and need to find their own rhythm. I'm glad you stuck with it. Sounds like the loaf was worth the wait.
