Had a week where every single batch of croissants came out perfect

Last Tuesday I nailed 8 trays in a row with that honeycomb interior I've been chasing for months. Has anyone else had a random string of good luck like that, or was it just the humidity being just right?

Hit a streak like that with sourdough loaves last spring, thought I'd figured out the secret until the weather changed and suddenly I was back to bricks. Maybe it's less about skill and more about the universe just deciding to line things up for a minute.

Keep the starter a little thicker when humidity drops... helps even things out.

Oh for sure, that weather thing is REAL. I had a whole month last fall where every single batch of bagels came out perfect - that chewy outside, soft inside, everything. I was feeling so proud, even started taking pictures to post. Then October hit and my kitchen got all cold and drafty and boom, back to hockey pucks that could crack a tooth. It's like baking has its own mind sometimes, you know? You think you've got it figured out and then it just decides to humble you again.
