Actually, that's a catering order, not a wedding cake.

Is it really that big of a deal? Cakes fall over sometimes, especially in bad heat. You just make a new one or give the money back. People act like a fallen cake is the end of the world, but it's just dessert.

My three tier lemon cake almost melted at an outdoor July wedding. I started using chilled dowels and a central support rod for anything over two tiers now. Keeping the layers in the fridge until the last possible minute was a game changer. A pastry chef I know even uses those small ice packs under the cake stand inside the box for transport.
