My grandma's tip about sifting flour three times actually saved my cake

Growing up my grandma always insisted on sifting flour three times before adding it to cake batter. I thought she was just being old-fashioned and fussy so I skipped that step for years. Last month I made a lemon layer cake for a friend's wedding shower and it came out dense with hard spots. I was so embarrassed I almost cried right there in the kitchen. My aunt watched me mess up and asked if I sifted the flour properly. I tried again this weekend with her method and the difference was night and day... the cake was light and fluffy like a cloud. Has anyone else had a stubborn baking rule they ignored until it backfired?

Oh honey, I really feel for you. That moment when something flops in the kitchen and you just want to crawl under the counter is the worst. I've been there more times than I care to admit especially with pie crusts, which my mother could do blindfolded but always turn into a sticky mess for me. It's funny how those little steps our grandmothers swore by actually do matter even when they seem silly or outdated. Good for you for going back and trying it again, that's the real secret to being a good baker.

@kellyallen you nailed the pie crust part. My mom could do it blindfolded too but I swear the kitchen thermostat drops ten degrees the second I try. Those old tricks like ice water or letting the dough rest actually work, they just feel like superstition until you skip them once.

Three times sifting sounds like a lot but it's honestly just the kind of small extra step that RELIABLY pays off. I noticed the same thing with how my dad sharpens his kitchen knives every single time before he cooks, even if it's just a quick steak dinner. These little ritual steps our grandparents did seem silly until you realize they were the difference between something good and something GREAT.
