Old bakers like me still believe in lard for flaky pastry, butter be damned.

I've used lard in my pie crusts for forty years and they always come out perfect, even though everyone says butter is king.

I was always on team butter for pie crusts, but now I'm kinda curious. Might have to give lard a try and see what happens.

Wait, you've never tried lard in a crust before? That's wild to me, it's like the OG way to get it super flaky. My grandma would have a fit hearing someone only use butter. Gotta say though, the flavor is totally different, way more rich and savory. You're in for a real treat if you do it right.

You know, it's funny how we all get stuck in our ways. I see it all the time with folks who only want one brand of motor oil, even when something else might work better for their engine. Same thing here with butter versus lard. Hayden, if you try it, you'll probably realize each one has its own place, just like tools in a toolbox.
