Hot take: the bake sale at my niece's school in Dayton made me stop trusting recipes blindly
Signed up to bring 4 dozen chocolate chip cookies to the Lincoln Elementary fundraiser last Friday. Grabbed a recipe off the back of the flour bag and they came out flat as quarters. One of the other moms, Trisha, looked at my tray and said "did you chill the dough?" I had no clue that was even a thing. Now I chill every batch for an hour and they finally look like real cookies, but man I felt dumb standing there with my pancake discs. Anyone got other little steps like that nobody tells you about?
This is the same thing that happens with cooking meat, nobody tells you to let the steak rest before cutting it and then you wonder why all the juice runs out. It's like there's this whole set of unwritten rules that everybody just knows somehow and if you didn't grow up with it you're screwed. My theory is people learned these tricks from a grandma or a mom standing next to them in the kitchen and it never got written down anywhere. Meanwhile the rest of us are out here following the bag and wondering why our food looks like a science fair flop.
