Just read that a huge amount of home bakers mess up measuring flour

I was reading a blog from a baker in Seattle, and she said something like 75% of people scoop flour right from the bag, which packs it down. That adds way too much flour and makes things dry. I always spoon and level now. How many of you actually weigh your ingredients?

My sourdough starter died twice before I bought a $15 kitchen scale.

My third attempt at chocolate chip cookies was a brick because I scooped. I switched to a twenty dollar scale from the grocery store and it was a total game changer. My cookies actually spread out and got chewy instead of staying in dry lumps. I don't even bother with cups for flour or sugar anymore, I just zero out the bowl and pour. It feels way less messy and more exact, which I need because I'm not a natural baker lol.

My grandma's old cookbook just lists flour by the handful, which is honestly terrifying.
