My cake was a total mess until I switched from a metal pan to a glass one
I mean, I was making a lemon drizzle cake for my friend's birthday and the recipe just said 'grease your pan'. I had this metal 9-inch round and a glass one, so I picked the metal one because it was shinier, idk. The edges burned in like 25 minutes but the middle was still raw, it was a disaster. Has anyone else had this happen with certain pans? Maybe it's just me but I feel like glass cooks way more even.

Tell me about it, I once made a brownie brick in a metal pan. Glass is definitely the move.

My buddy tried making cornbread in a metal pan once... ended up with a hockey puck and a burnt smell that hung around for days. Glass is the only way to go after that.

Shiny pans are a trap, aren't they? My metal one just sends heat straight to the edges like it's in a hurry. Glass actually lets the whole cake cook at the same speed.
