Warning: the butter trick I saw at a bakery in Asheville changed how I make pie crust
I was in Asheville two weeks ago and watched a baker at a little spot on Haywood Road grate frozen butter on a box grater instead of cutting it into cubes. She said it keeps the butter cold and spreads it evenly so you get flakes instead of tough spots, and I tried it at home with a 1/2 cup of frozen butter for my apple pie. The crust came out way flakier than my usual version and I didn't have to fight with a pastry cutter. Has anyone else tried grating frozen butter, or do you have a different trick for keeping it cold?
Grated frozen butter is one of those small kitchen tweaks that makes you wonder why nobody told you sooner, like freezing cookie dough before baking or salting pasta water like the sea. Funny how the best tricks are always the simple ones hiding in plain sight.
