Unpopular opinion: The new lime mix from that big box store sets up too fast for a beginner.
I watched a guy try to build a simple garden wall with it last week, and his first six courses were a mess by the time he got to the end of the line. After he switched to the old-school bagged stuff, the whole job went smooth and looked clean. Is the faster set worth the hassle for someone still learning?

My buddy had the same problem with that mix. He was trying to patch his foundation. Stuff was already going off in the bucket before he could even get his trowel clean. Had to chip it all out and start over with regular mortar. Total waste of a Saturday.

Yeah, that fast-set stuff is no joke. I mix super small batches now, like just enough for a trowel or two at a time. And I keep a spray bottle of water handy to mist the bucket and my tools, it buys you a few extra minutes to work.
