Wet mortar on a windy day in Tulsa cost me 4 hours I didn't budget for

I mean, everyone talks about frost and rain, but nobody warns you that 25 mph gusts will dry your mud mid-strike, so maybe it's just me but does anyone run a tarp windbreak or just eat the overtime like I did last Tuesday?
