Remember laughing at the idea of weekly soup prep, thinking it was just another chore. I thought it was too much work for not enough gain. A tight month made me try it, and now I rely on a simple lentil and vegetable soup. Just cook an onion, add chopped carrots, celery, dried lentils, and broth, then let it cook until soft. It costs very little per bowl and freezes well for busy nights.

Yeah that happens a lot with simple systems. Saw it with budgeting apps too. People think setting it up is a hassle, not worth the time. Then a tight week forces them to try it, and they realize the automatic tracking saves more hours than the old spreadsheet method. We fight the simple fix until we have no other choice.

Do you ever throw in a handful of barley to make the soup more filling? I do a similar thing with chicken and rice soup, but I use cheap bone-in thighs and simmer them for broth, lol. After the meat falls off, I shred it, add rice and whatever veggies are on sale that week. Freezing it in single portions means I can grab one for lunch without any hassle. It saved my butt during a tight month, just like rowan_wood said.
