My aunt's $11 Aldi run in Toledo taught me more about dinner than 3 cookbooks did
I stayed with my aunt in Toledo back in March and watched her feed four people for $11 at Aldi on a Tuesday. She grabbed a bag of potatoes, a carton of eggs, a block of cheddar, and two cans of tomatoes, then made a huge frittata and roasted potatoes that lasted us two dinners. I had been spending around $60 a week on groceries for just me and tossing half of it. Now I plan two cheap base meals on Sunday and build the rest of the week around them instead of buying whatever looks good. What is your go to cheap base meal that actually stretches to a few days?
Two things in my house that always stretch: a big pot of lentils with onions and carrots, and a tray of chicken thighs roasted with whatever veg is dying in the drawer. I spend maybe $14 and we eat off it for three nights, no problem. Your aunt's frittata trick is solid too, eggs are stupid cheap for how far they go.
