My grandma swore by throwing a washed potato peel into any pot of soup to thicken it up and stretch it, and I always thought she was just being weird. Last month I had a thin vegetable soup with barely enough for two, but my roommate was coming home hungry and I had zero cash for extras. I tossed in a couple of clean potato peels, let it simmer for 20 minutes, and it honestly got that creamy, hearty feel without any cream or flour. She passed away a few years ago, but that little habit of hers saved me from a sad dinner situation on a Tuesday night. Now I keep a bag of peels in the freezer for when things get tight, which is pretty often lately. Has anyone else tried this, or do you have a weird family trick that actually holds up? The peels definitely added some texture, but I'm wondering if I should rinse them longer next time to avoid that starchy taste.
