Three hours to peel a 5 pound bag of potatoes, never again

Tried meal prepping for a week straight with fresh spuds and it took me 3 hours just for the peeling and chopping part, way longer than any meal itself. Has anyone found a faster way to get through a big batch of potatoes without dropping cash on a fancy gadget?

Ugh, I feel your pain on that one. Three hours is brutal, I would've thrown in the towel way before that. Honestly, the only thing that's ever worked for me is to just accept that peeling potatoes is a slow, mind-numbing chore and put on a podcast or something. I've tried those cheap handheld peelers and they're garbage, but a decent Y-peeler from the store makes a world of difference, still takes forever though. You could just leave the skins on for some recipes, they get crispy and taste great, that's what I do now. Big batch cooking is supposed to save time, not eat up your whole afternoon, so I don't blame you for never wanting to do that again.
