Finally got the hang of breaking down a whole hog...
After about 8 months of trying, I finally did a whole breakdown without needing to check my cheat sheet once. Did it yesterday at the shop over in Lancaster and the shoulder seam just popped right where it was supposed to. Anyone else remember that first time it all clicked?

Oh man, @dakota_miller93 that story is hilarious but also kinda weird. I mean, I get being proud of learning a new skill, but taking a photo with the hog shoulder like a trophy? Feels a little much. Is it really that big of a deal, or is your buddy just extra dramatic about hog butchering?

Watched my buddy Jake butcher his first hog at his place near Reading about a year ago. He spent like 6 weeks studying YouTube videos and had his cheat sheet laminated and everything. When he finally got that first shoulder seam to give way clean without any hacking, he just stood there with the knife hanging in the air for a solid 10 seconds. Then he looked at me with this stupid grin and said "bro I think I actually got it." His wife came out to see what all the yelling was about and he made her take a picture of him holding the shoulder up like a trophy.
