I finally broke down and bought a new breaking knife after 12 years

Last Tuesday I was trimming a whole ribeye and my old Victorinox just would not hold an edge no matter how many passes on the steel. I caved and got a new one for 45 bucks and it cut through fat like butter, made me wonder why I waited so long. Anybody else stick with a beat up blade way too long just because you're used to it?

My buddy Mike at the shop kept using this old Forschner that was basically a butter knife for like 3 years. He finally slipped trying to cut through a tendon and damn near took the tip of his thumb off, $400 ER visit later he bought a new one that afternoon. Guess sometimes you gotta learn the hard way that a beat up blade is just dangerous.

Used to be on team "just keep using it til it breaks." Mike's thumb story changed my mind real fast. A new knife is way cheaper than an ER visit.

Nah man, a sharp blade lets you rush and get sloppy.
