Spent 45 minutes trying to get a clean spiral cut on a pork shoulder last weekend
Turned out my boning knife was just slightly dull on the tip and it threw off the whole angle, has anyone else had a simple tool issue eat up way more time than it should have?

Funny how a tiny dull spot can wreck everything. Maybe it's less about the blade and more about how we rush through the prep before actually testing the edge.

Yeah @henryr45, did you ever try slowing down and just working that one spot with a finer stone before moving on? I had a similar thing with a kitchen knife last month where one tiny burr kept messing up my edge. After the third time stropping and still feeling a catch, I went back to the 6000 grit and gave that spot a few extra passes. Fixed it quick. Now I check the whole edge with a flashlight before I even grab the strop.

Had a buddy who spent a whole afternoon sharpening a hunting knife and could never get the tip to pass the paper test. Turned out he was rushing past a tiny chip near the tip because he was focused on the middle of the blade. @henryr45 it's wild how skipping that one spot can make you think the whole edge is toast when really you just gotta go back and work it slower.
