That one Tuesday where everything went sideways with a half cow

Last month I had a half cow come in from a farm up near Harrisburg, and it was the worst day I've had in 12 years of cutting. The guy brought it in still warm, said he shot it 2 hours ago, and I spent 4 hours trying to get a clean break on the ribs. Has anyone else dealt with meat that's way too fresh to break down right?

Wait, you're telling me he showed up with it still warm from 2 hours ago? That's insane, I'd be scared of the meat seizing up on me before you could even get a knife in there.

Man, was the meat still steaming when he pulled it out? Did he give you any kind of heads up or just walk in with a hot roast like it was no big deal?
