That Tuesday in March when I broke down a whole 800 lb steer by myself and the walk-in quit at 4pm
My main guy called out sick, my backup had a family thing, so it was just me and an 800 lb grass fed steer from a farm up in Kalona. I got the whole thing broken into primals and was trimming the last few roasts when the walk-in compressor started making that clicking sound, you know the one, and by 4pm the temp was climbing past 50. I threw everything into my truck bed coolers with ice from the gas station across the street and sat there with a thermometer at 10pm watching it hold at 38. Lost maybe 15 lbs of trim but saved the rest, and honestly I have never been that wiped out after a shift. Any of you keep a backup cooler setup for nights like that, or is it just me being paranoid?
