The day a customer showed me my own bad habit

I've been cutting rib eyes at my shop in Tacoma for about 15 years now. Last spring, a customer asked if I could trim the cap differently because his wife liked it thinner. I got defensive, but then he pointed out I was leaving more fat on than I ever noticed. I measured a few of my cuts that night and saw I was losing about 2 ounces a steak on average. Has anyone else had a customer catch something you'd been doing wrong for years?

Ha! Wait till you hear what a customer pointed out at my favorite bbq joint. They told me I'd been squeezing the sauce bottle wrong for years and never even noticed. I thought I had it down, but I guess I was just making a mess and wasting half of it.

Tilt the bottle at a 45 degree angle and squeeze from the bottom corner, that's the trick... most people grip it in the middle and end up spraying half of it sideways.
