Visited a small shop outside Austin that dry ages in a used wine fridge
Stopped by a place near Georgetown last month and they had a whole setup in an old wine fridge converted to a dry age box. They're getting better results than my $2,000 cabinet with a few salt blocks and a computer fan. Anyone else tried the budget DIY route for aging?

Is the salt block really doing the heavy lifting, or is it just the air flow?
