Went to a ranch auction in Montana, the lamb cuts were a total surprise

I drove out to a small ranch auction near Billings last Saturday just to see what equipment was going for. While I was wandering around the pens, I saw this old timer breaking down a whole lamb right there on a tailgate with basically a bone saw and a pocket knife. He had the most beautiful, clean cuts I've seen in ages, way better than some of the fancy shops I've worked in. Turns out he's 72 and has been doing it that way since he was a kid, never used a band saw in his life. I asked him for tips and he laughed, said 'the meat tells you where to cut, you just have to listen.' I ended up buying a whole half lamb from him for $180, and it was some of the best meat I've ever handled. Anyone else ever pick up a trick from an old timer at an auction that just blew your mind?
