Moisture meter said dry, wood moved anyway in Tulsa

Last Thursday I was fitting a shaker door in a remodel over in Owasso and my meter read 9% on some white oak. Installed the full set of cabinet doors, went to grab lunch, came back an hour later and the center stile had bowed a quarter inch. The customer's HVAC had been off for weeks and the house was at like 70% humidity, meter was only checking surface. I had to pull three doors and re-flatten the faces before remounting. Has anyone else had a meter fool them like that, and do you use a pin probe or just trust the room conditions first?
