Just found out how much white oak moved in my last 40 board feet

I was re-checking some measurements on a dining table I built last month for a client in Austin. The top was flat when I glued it up, then three days later it cupped maybe 3/16 of an inch across the middle. I thought I did something dumb with the clamps or the glue. So I pulled out my moisture meter and started digging through old forum threads from like 2011. Turns out white oak can change dimension up to 8% across the grain from 6% to 12% moisture content. I bought that lumber from a yard that stored it outside and never checked the meter before planing. Stupid me. I always check now before I even joint the first board. Anyone else get burned by stock that seemed dry but wasn't?
