Am I the only one who thinks brunch service is harder than dinner?
Last Saturday at the bar I work at in Portland, our egg station cook called out sick and I had to jump on the flat top during a 200 cover brunch rush. I've worked dinner service for years, but trying to keep 12 omelets and a pile of over easys going while the ticket rail filled up was a whole different animal. Some of the crew says brunch is a joke compared to dinner because the menu is simpler, but I think the pace and the timing on eggs makes it way harder. Dinner tickets give you room to breathe, brunch just buries you if one thing backs up. Which side are you on, is brunch easier or is it just a different kind of hard?
