Just hit 1,000 pounds of onions prepped in a single month
Our new French onion soup special at the bistro went nuts, and my knife log shows I prepped 1,023 pounds of onions in March. My eyes are still burning (you know how it is). That number hit me because it's the first time I've ever tracked a single ingredient like that. Has anyone else ever been shocked by a prep number that big?

A thousand pounds of onions is a truly insane amount of work. Your poor eyes must have cried enough to make their own soup. I bet you could smell onions on your skin for a week straight. That number is both a huge accomplishment and a little bit terrifying. You have my full respect for surviving that prep.

What kind of knife are you using for that volume? I'd be worried about my edge holding up through all that.
