Spent 8 hours fixing a hollandaise that broke 3 times
Everyone says you can fix a broken hollandaise with a splash of cold water and some whisking, but I tried that for 45 minutes with no luck. Ended up starting over with a fresh batch, then taking 2 hours to figure out my heat was too high on the double boiler. Has anyone else found that advice to be useless more often than not?

Tried that for 45 minutes with no luck" - yeah, I've been there. That cold water trick works maybe 1 out of 10 times in my experience. The rest of the time you just end up with sad, watery egg goo that refuses to come back together. I've learned the hard way that if it doesn't fix itself in the first minute or two, just scrap it and start fresh. The worst is when you're trying to save it for a dinner deadline and you end up wasting an hour on something that was never going to work anyway.

Funny you mention that, I actually had the same thing happen last month with a hollandaise sauce. I just threw it in the fridge for 20 minutes and then gently reheated it on low, and it somehow came back together. Of course, that could've been total luck too.
