The 10-second plating critique that changed my sauce game
Had a regular tell me my braised beef jus looked 'muddy' and it stung so bad I redid the whole reduction process. Swapping to a fine chinois and resting the meat longer before saucing fixed the color and the flavor depth somehow. Anyone else get a short blunt comment that stuck with them for weeks?

Honestly, I see it the other way. A muddy jus can still taste incredible, and chasing that clear, glossy look sometimes strips out the deeper, darker flavor you get from letting the fond and braising liquid hang out together. I've had customers tell me my sauce looked "rustic" and I took it as a compliment, because that's where the character lives. Resting the meat longer, sure, that makes sense, but the chinois step feels like you're over-polishing something that was already good. Your mileage may vary, but I've had more luck leaning into the murky stuff and just making sure the seasoning is sharp. Sometimes the clarity people want is just a different style, not a better one.
