Tried a pinch of smoked paprika in my hollandaise for brunch service. The whole line smelled like a campfire.

That smell hanging around is no joke, it really sticks to everything. I did the same thing once for a dinner party and my whole kitchen smelled like I'd been grilling burgers for hours. Totally worth it for the taste though, your brunch crowd probably loved it.

Did it mess with the sauce's color, or did it just add that smoky flavor?

Made it darker like anthony_wood36 said, but the smoky taste is worth it.

It also changed the texture a bit, made it thicker.
