Unpopular opinion: watching a line cook in New Orleans flip a pan with a towel changed how I handle rush hour
I was staging at a spot on Magazine Street six months back and this guy on the line never once touched a handle with his bare hand during the whole Friday push. He kept a folded bar towel clamped on the handle and just whipped the pan with that, and nothing slid, nothing burned. I had been burning my palm and forearm at least twice a week during service, and it hit me that the towel wasnt just a wipe down, it was his grip. Started doing it three weeks ago and my pans have not slipped once during a rush, even with a wet rag nearby. How do you all handle hot handles during a push, towel, glove, or something else?
