Walked into my old culinary school in Providence and the knife wall is gone
Stopped by my old culinary school in Providence last month for the first time in 12 years and the knife wall in the first kitchen is just gone, replaced with a rack of tablets on charging cables. That wall was where I learned to keep my station tight, 40 slots and you could tell who was serious by whether their knife was in the same spot every single day. The chef who ran it back then used to say your knife tells on you before you even pick it up. Kind of sad walking past it, but I get it, times change. Has anyone else gone back to their old kitchen and had it look nothing like what they remember?
Buddy of mine went back to the diner where he did his first cook job, and they had torn out the whole flat top line and put in a bunch of air fryers and a conveyor oven. He said the smell was the same but nothing else was, and he just stood there feeling weird about it for ten minutes. The old guy who trained him used to smack the ticket rail when it got busy, and that rail is in a dumpster somewhere now. Places change and there is not much you can do about it, but losing a knife wall stings more than most stuff. That wall was basically a scoreboard for who gave a crap.
