A barista in Omaha told me to stop blooming my dark roasts for 45 seconds, and my morning cup got way better
I always did a 45 second bloom out of habit, but she said dark roasts are already degassed and I was just letting all the good stuff escape, so try 15 to 20 seconds and see if the flavor holds up better, and honestly it did, so now I'm wondering what other brew habits I picked up without checking if they actually matter for the beans I'm using.
That 45 second bloom is one of those things that gets passed around like gospel without anyone asking why. I switched to about 20 seconds for my dark roasts a while back and noticed the same thing, the cup just tastes rounder instead of flat. Now I eyeball it based on how fresh the beans are, older beans get even less time.
