A barista in Seattle poured my espresso 20 seconds early and it made me rethink my whole routine
She watched my shot pull, pulled the cup before the last few drops, and said "those drops are just water and bitterness" - so now I want to know if anyone else cuts their shots short like that or if I've been doing it wrong for 3 years.
Heard a roaster on a podcast say the last part of the shot gets bitter fast, so cutting it a bit early can actually help. Been pulling mine a couple seconds short ever since and honestly it tastes smoother. She might be onto something.
