A barista in Seattle showed me how to pour a flat white without a spoon
I was at a small shop called Cloudline Coffee last month, just watching the barista work. She poured the steamed milk from a high angle first, then dropped the pitcher right down to the surface. She never touched a spoon, just used the pour to mix the espresso and milk together. The drink came out smooth and velvety, not layered at all. Has anyone else seen this method or tried it at home?

Always thought you needed the spoon, but that method actually works.
