A barista told me my pour was too fast and now I actually taste the difference

She watched me pull a shot at this little shop in Portland and said 'you're rushing the bloom,' so I slowed down to 30 seconds per pour and my morning cups went from bitter to sweet, has anyone else had one tiny critique completely flip their routine?

The "30 seconds per pour" part is where I gotta disagree. I've played around with this exact thing, tried the slow pour method at home for like two weeks straight. My shots got more syrupy, sure, but the acidity kinda flattened out too. I actually prefer a faster bloom on lighter roasts, like 15 seconds max, keeps some of that brightness. Maybe the barista was right for that particular bean or grinder, but I wouldn't call it a universal fix. Sounds like you found what works for you though, so that's cool.

Slow pours build sweetness without killing brightness if you back off the heat first.
