Can we talk about how my morning brew changed after switching water sources

I lived in Denver for 5 years using tap water. Coffee always had this weird flat taste. Moved to a small town outside Austin 3 months ago. Now I use well water from my new house. First cup I made here at 6am blew my mind. The flavor was brighter, smoother, no bitterness at all. I honestly thought it was my brewing method for years. Now I realize water makes way bigger difference than I ever gave it credit for. Anyone else ever notice a huge shift just from moving locations?

Pulled my first shot with straight well water and thought I'd accidentally become a professional barista overnight. @ruby_bell47 described it perfectly, it's like a veil lifting off the flavor, though my veil was made of disappointment and mediocre grocery store drip.

My well water at home in Michigan is so hard it leaves crust on everything. I tried making coffee with it once and it tasted like I was drinking from a rock. I'll take my flat city tap water over that any day.

I used to roll my eyes at people who talked about water quality for coffee. Thought it was just snobbery. Then I moved from a place with super hard city water to a house with a basic filter on the well. Same beans, same $20 Mr. Coffee machine. The difference was genuinely shocking, like a veil had been lifted off the flavor. My evening cup turned from something I choked down to something I actually looked forward to.
