My barista friend insisted I try a $15 bag of Ethiopian beans, and I was so wrong to doubt her.

She told me to grind it fresh right before brewing and use water just off the boil. I'd always bought the pre-ground stuff from the grocery store. The difference was insane. It tasted like blueberries, not just bitter water. Has anyone else had a single piece of advice completely change their morning routine?

Honestly thought my old drip machine and canned grounds were just fine. A friend made me try a proper pour-over with a scale and timer, and it was a totally different drink. My cheap routine felt like a crime after that.

My first time with a real scale and gooseneck kettle, I used way too much coffee and brewed a cup so strong it could have stripped old shingles off a roof. I felt like I needed to apologize to the beans for what I did to them. Took me three tries to not make tar in a mug, but that first decent cup was a real eye-opener. Now my old auto-drip just looks sad and guilty sitting in the cabinet. I can't go back to the canned stuff without feeling a little bit of shame, honestly.

Yeah, that "tar in a mug" feeling @ruby_bell47 mentioned is too real. Once you taste the good stuff, there's no going back.
