My brother called my coffee 'mud water' and I finally figured out why
He came over last Tuesday and said my pour over tasted bitter and weak at the same time, which I didn't get. He asked what my water temp was and I just guessed, boiling it in a kettle. I looked it up and started using a cheap kitchen thermometer to keep it between 195 and 205 degrees. The difference after just two days was huge, way more flavor came through. Has anyone else had a simple fix like that totally change their brew?

Wait, you were just straight up boiling the water and pouring it on the grounds? No wonder it tasted like bitter dirt. @craig.piper is right, I used to think that was just fussy talk too until I burned a batch myself. That temp range is the only thing keeping my morning cup from tasting like hospital coffee.
