My friend in Austin swore by putting a pinch of salt in his coffee grounds

I tried it this morning with my usual pour-over setup and, honestly, it cut the bitterness without making it taste salty. He said it works with about 1/8 teaspoon for a full pot. Has anyone else given this a shot, or is it just his weird Texas thing?

Wow, I totally thought this was a prank the first time I heard it! I tried it last week and nearly choked on my coffee because I was so sure it would taste like ocean water. But nope, my cheap grocery store beans actually tasted smoother. Guess my taste buds are the weird ones for doubting it.

Nearly choked on my coffee" is so real, I did the same thing. @wood.jana is right about the tiny pinch, it's easy to overdo it. Glad it worked out for your cheap beans too.

Yeah, it's a game changer for sure. @thompson.julia, you're not weird for doubting it, but the amount is key. A full 1/8 teaspoon for a single pour-over would be way too much, that's for a whole pot. Just a tiny pinch is all you need.
