Picked a manual lever machine over a semi-auto for home espresso
I had to choose between a La Pavoni lever machine and a Breville Barista Pro for my home setup last month. Went with the La Pavoni because I wanted more control over pressure. Any other home espresso guys regret going full manual or find it worth the learning curve?

I burnt my hand three times in the first week with my La Pavoni. The thing is basically a steam-powered oven that makes espresso. But honestly, once you get the hang of the pressure and the timing, it's way more fun than just pushing a button. I still pull a bad shot every now and then, but that's usually because I'm rushing or not paying attention. Totally worth the learning curve if you like tinkering with your coffee.

Saw a video where some pro barista said these machines actually run at a lower temp than you'd think if you temp surf correctly. He was pulling shots that looked like honey, not watery at all. Made me realize the burns are almost a rite of passage, you know? Like learning to drive stick shift with a car that bites back a little.

Man that's exactly how I felt when I got my first machine. The burns are just part of it like you said. I remember the first week I had a Pavoni, I touched the steam wand knob without thinking and had a blister for days. But once you figure out the temp surfing thing, the shots come out so much thicker and sweeter. It's like the machine teaches you patience because if you rush you either get burned or drink thin sour espresso. I still get a little scar on my hand every now and then but it's worth it for that perfect pour.
