The barista at Blue Bottle changed my mind about pour-overs

I always thought pour-overs were just fancy drip coffee with extra steps. But last week the guy at Blue Bottle in SoHo spent 5 minutes showing me how the water flow matters, and after tasting his batch I bought a V60 on the spot. Anyone else have a coffee shop employee flip your opinion on something?

Trust your taste buds, not the hype. A cheap setup with fresh beans beats expensive gear every time. @danielowens is right about the cash pit, but you don't need to fall into it unless you want to.

@danielowens called it, I'm already three bags deep trying to nail that same cup at home. But you know what really stuck with me from that barista? The way he talked about the water flow like it was this tiny detail that changes everything. It made me think about how we overlook a lot of similar small things in life, like how the angle of your wrist when you pour affects the taste, or how just a few extra seconds of patience with something makes all the difference.
