Thought pour-over was just hipster theater until I tried one at a shop in Boise last week.
I always figured it was just overpriced drip coffee, but the clarity on that cup was something else. Anyone else get converted by a specific shop or setup?

Aeropress got me into it, but a Kalita Wave at a shop in Portland sealed the deal. Try tweaking your water temp down a bit, it made a huge difference for me with light roasts.

Lmao I feel you on the "coffee awakening" thing, mine happened at a tiny shop in Seattle and I swear I almost cried over a pour over. But yeah the water temp trick sounds backwards as hell, I remember thinking "cooler water for light roasts? That's like putting ice in your soup or something." Tried it anyway cause I'm stubborn and bad at following directions, and honestly it's wild how much smoother the coffee gets without losing any of the fruity notes. I still screw it up half the time though, like my brain just forgets and I go straight to boiling like a caveman.

Well I gotta say, "sealed the deal" really got me. That sounds like you had some kind of coffee awakening in Portland. I've been messing around with pour overs for a couple years now and never thought about dropping the water temp for light roasts. I always just assumed hotter was better to get more flavor out of them. But you're saying going cooler actually works better? That seems backwards to me honestly. I might have to give that a try this weekend with some beans I've been struggling with.
