Two years of pour overs, then one trip to a diner flipped my taste

I've been doing the whole single origin, gooseneck kettle, scale to the gram thing since 2022. My home brews tasted clean and bright, no argument there. Then last month I stopped at a diner outside of Scranton and ordered their bottomless drip. It was awful in the best way, thick, bitter, a little burnt. And honestly, I kind of loved it. It made me wonder if I've been chasing the wrong flavor profile this whole time. Like, maybe I traded soul for clarity, you know? Are we all just polishing coffee until it loses its edge? Has anyone else gone backwards like that, from fancy beans back to a heavy, diner style cup? I'm genuinely split on which one I actually want in the morning.

Hell yeah, that diner cup hit different! I think the grime is part of the charm, but maybe it's also about the mug itself. Those thick, heavy ceramic mugs hold heat way longer than my fancy glass server, so the coffee keeps kicking you in the mouth sip after sip. Try pouring your fancy brew into a thick diner mug and letting it sit for five minutes, it's a whole different beast. Your mileage may vary, but that little trick gave me the burnt soul without actually burning anything.
